I bet you’re thinking, Stacey, we’re Aussies, what on earth earth are Rice Krispie Treats? Well to put them in Aussie terms, you remember the rice bubble slice your Mum used to make? Or maybe think of them like little gluten free LCM’s. What ever way you remember them this seriously easy treat makes the perfect Halloween or birthday party surprise or a sweet little treat for the kids during the week.
Just what are Gluten Free Rice Krispie Treats?
A fabulous no bake recipe that requires only 3 ingredients to make, its fast, easy and super fun to whip up. You can let your creativity run a little wild and use this recipe to create ALL sorts of themed goodies, making it perfect for our gluten free kiddos birthday parties. Of course as I write this, Halloween is right around the corner and for those of you who celebrate, it makes a great spooky treat.
To make it you simply mix gluten free rice bubbles with melted butter and marshmallows. Press it into a tin and leave it to set. Bam! Easy rice krispie treats. If you wanted to get really fancy you can mould the hot mixture into just about any shape or even press into a well greased silicone mould. Honestly, the options are endless.
I chose to make mine into cute little bites with sprinkles and spooky monsters at my sons request. To do so we simply used melted white chocolate!
The Low Down on Gluten Free Marshmallows
Whether you’re new to the gluten free lifestyle or have been around the traps for a while, gluten free marshmallows are a topic that are hotly debated. Even though most marshmallows are made of corn syrup (or highly processed wheat glucose) making them gluten free, a lot of the big brands have contamination risks. So to make it simple for you I’ve listed below the top gluten free marshmallow brands for you and where to find them!
Now a note on Pascall marshmallows before we dig in. Even though Pascall brand marshmallows are gluten free by ingredient they have a very high risk of gluten contamination. The brand chooses not to put a may contain statement on their products (even though Coeliac Australia have asked them to). Unfortunately their marshmallows are made on the same lines as their other gluten containing lollies, meaning they’re not safe for Coeliacs. Customers have even found errant snake lollies in their packets!
Instead I recommend opting for one of the brands below!
So Soft Marshmallows – Jumbo and normal sized – Available at Woolworths & Big W
Campfire Giant Roasters – Available at Kmart and some IGAs
Grounded Pleasures – Online or from their stockists – these are amazing and one of my favourites! In fact their entire range of hot chocolates are gluten free too and you’ll find them stocked in my own store.
Dandies – Available at Health food stores or online via Happy Tummies
Simply Wize Irresistable Marshmallows – Online or select IGAs (can sometimes be harder to find)
Simply put there are plenty of other choices that will give you the taste and look of genuine marshmallows without the pesky contamination risk! So have at it!
Just remember, if you use pink marshmallows you’ll end up with pink rice krispie treats… like I did…. oops!
Some Decorating Tips
As I’ve said the sky is truly the limit when it comes to decorating your gluten free rice krispie treats. But here’s a few tips on how to achieve some funky friends for Halloween:
- To create goo, ghostly bandages or spider webs white chocolate is your friend! All of Nestle’s baking range is gluten free and tasty to boot! Simply melt and drip over your treats.
- To have some real fun you can dye your white chocolate! Just be sure to use a gel based food dye otherwise it will split. My favourites are the Chefmaster range available at Spotlight and Kitchen Warehouse. They’re certified gluten free!
- You can go wild with sprinkles here too. The Over the Top range also available at Spotlight and Kitchen Warehouse are all certified gluten free too!
- To make monster eye balls like I have, simply mix up a classic Royal Icing mixture and pipe two dots on top of each other and allow to dry. There’s lots of different recipes available on Google and the icing freezes for months!
- You can make into moulds or shapes whilst still warm and when set, cover with fondant! If you’ve ever watched any of those US Bake off shows you would have seen them use rice krispie treats to make all sorts of things! (not that I watch a lot of those or anything 😂)

Gluten Free Rice Krispie Treats
My super easy gluten free Rice Krispie Treats recipe will have you flashing back to your childhood. A super easy recipe for the whole family.

Ingredients
- 250 grams Gluten Free Rice Bubbles
- 55 grams Unsalted Butter cubed
- 300 grams Gluten Free Marshmallows see notes above
- White Chocolate, food dyes, sprinkles to decorate
Instructions
- Line a 25cm Square cake tin with plenty of baking paper, allowing the ends to hang over the edge.
- In a large bowl place the gluten free rice bubbles and set aside.
- In a large saucepan place the butter and allow it to melt over a medium heat. Melt fully and give a quick swirl with a wooden spoon.
- Add the marshmallows to the saucepan a handful at a time, stirring constantly. The marshmallows with slowly melt and look stringy. This is normal, just keep stirring.
- Continue adding marshmallows until they've all been used up, keep stirring mixing the melted butter into the marshmallow to create a gooey, sticky white/pink mixture.
- Remove from the heat and pour over the rice bubbles. Moving quickly stir the mixture through the rice bubbles ensuring everything is covered. Tip your rice bubble/marshmallow mix into your prepared tin and start pressing out into the corners. Be careful as it can still be a little hot.
- The mixture is quite sticky at this point so I recommend lightly greasing a metal spoon (a little vegetable oil or olive oil spray works a treat) and using that to spread it around. Press it down firmly to create a fairly smooth single layer of rice krispies.
- Leave the tray of rice krispie treats at room temperature for 30 minutes, this will allow them to firm up into a solid bar. Do NOT place in the fridge.
- Once set, use the baking paper overhang to remove the slab of rice krispies from the tin. Place onto a counter (still on the baking paper) and cut into bars as big or small as you like.
- You can store the rice krispie treats at room temperature for a week as they are. Or decorate using the tips in the blog post above. Once fully decorated you can store in the same way. Be sure to place strips of baking paper between layers to prevent them from sticking.

- A tip for cleaning up! The saucepan and bowl with the melted marshmallow mix can be horrible to clean. Allow them to soak with warm water and a drop of dish liquid to make it simple and easy.
