I have a confession to make. I’m a spoon it straight from the jar to my mouth kind of person. Preferably whilst standing in the kitchen in my pj’s, or hiding in the pantry away from my son. What am I eating, you might ask. Well pretty much just about anything. Though you may know that already if you’ve read my Nutella Cookie post!! In this case, it’s peanut butter. I have to admit though, sometimes eating it straight from the jar just doesn’t cut it. Sometimes I need to whip up my super quick Gluten Free Peanut Butter and Chocolate chip cookies!!
Don’t judge me OK! I know I’m not the only one hiding my jar obsession. Sadly it doesn’t end there (and you need only ask my husband). He’ll often find me standing at the stove, peanut butter jar next to me, spoon in my mouth, stirring dinner. The dinner might not even have had peanut butter in it!! Alas. We all have our vices. This just happens to be one of mine.
So it was on one of these days, standing in my kitchen, rain pouring (rather unceremoniously outside my window, you know, in January!) that I had a sudden hankering for peanut butter. In I snuck to my pantry, whilst the kiddo played in his play room, spoon in hand. Naturally I reached for the peanut butter, I’d run out of Nutella you see. The spoon was half way to my mouth when I spied the open packet of dark chocolate chips… hmmm… yes these will do nicely.
Two spoonfuls in (small teaspoons, come on, I’m not a complete crazy person) I think, why not make up a delicious, warm batch of cookies on this cold…errr… January, day.
Thus, my seriously delicious, warm, gooey, just nicely peanut buttery (you know, not too peanut buttery, where they stick to the roof of your mouth) dark chocolate chip cookies were born. I knew you’d want in on them too… because, hey, peanut butter and dark chocolate… need I say more?
Peanut Butter + Dark Chocolate + Sea Salt = Perfection!
The best part about these gorgeous cookies is you can totally take them to the next level by indulging just a little bit more. You could absolutely just whip up these delicious gluten free peanut butter and chocolate chip cookies and enjoy them warm, straight from the oven, with a glass of milk. BUT! Why not melt a little extra peanut butter and a little dark chocolate and drizzle over the tops? Finish with a sprinkle of sea salt and BOOM! You’ve got one extravagant cookie!! Or why not serve them up for dessert with a lump of vanilla bean ice cream squished between two? Hello Heaven!!
Any way you want to enjoy them, they are easy, simple and delicious. Oh and they just happen to be Gluten Free!.. I mean would you expect any less?
