Baking holds a certain magic for me. I can lose myself in the creativity, zone out and de-stress through the repetition of a well loved recipe, challenge myself (and drive myself crazy sometimes) trying to perfect a new technique or recipe. But sometimes it is simply because I need to bring dessert to a family gathering. (And well sometimes it’s just because I’ve got a massive sugar craving and need something sweet…. like, STAT!) In those instances where I just need something quick, easy and delicious to bring along, I turn to my Seriously Simple Gluten Free Syrup Cake.
This weekend just gone I found myself in the last category…. the ‘I need to bring something to a little family gathering category’. I debated for quite some time what I would make and bring along. It was a bit unusual actually, normally I know right away as I’ve already been wanting to try something new or taste something in particular and just need an excuse. This time though? Nada. Zilch. Nothing. I came up short.
I sat for a while looking through my recipe box and cook books and finally I settled on something easy and delicious. That’s all it’s gotta be sometimes. Quick. Simple. Yummy. Moist and Fluffy.

It just happens to be Gluten Free too and doesn’t even taste it! It also only has 5 ingredients, most of which you’ll either have in your pantry/freezer already or can get your hands on easily.

Top with a sprinkle of icing sugar or some fresh berries piled high! Now since it is such a syrupy cake don’t be surprised if you find it sticking to your knife a little when you try to serve it.
