Ahh those summer days. Hot, sunshiny days spent at the beach, the smell of hot chips and sunscreen. Sand in places where you really wish it wasn’t and the sound of waves crashing onto the shore as the sun finally sets, letting the temperature drop 10 plus degrees. Nothing could finish a day like that off any more perfectly than a pina colada popsicles, don’t you think?
Where ever you envisage yourself on those crazy hot days, the simple fact is there are few ways to cool down better than plonking yourself beside the seaside. The exception to this of course, is gobbling down an icy cold popsicle. Especially if, like me, you live no where near a goddamn beach!

It’s funny how certain flavours and smells can transport you somewhere. The combination of fresh pineapple and rum make me think of only one place these days…. Mauritius. Where my husband and I spent our honeymoon lazing by a glorious pool ordering Piña colada after Piña colada.
It was these two ideas that inspired me this week to whip up a delicious treat that will be perfect come New Years Eve, especially if it just happens to be another stinker. A treat that combines the feeling of a day at the beach and those gloriously delicious Piña colada flavours. In fact I’m so in love with the idea of turning cocktails into popsicles right now that I’m planning a whole series of them!
So if you need something quick and easy to whip up for a New Years celebration, or maybe you just want a little adult tipple while the kids devour their own popsicles, then this recipe is for you!!
Now of course, one cannot simply whip up a Pina Colada without this, errrr classic song running through there head… so just because I know you’ll be singing this around the kitchen anyway, here it is…. Escape!
Of course there’s still plenty of time to whip up a batch of these yourself for any celebrations you might be hosting!! I guarantee, you’ll be the talk of the party with these babies in hand!
